Banana Pudding

80 grams flour (10 tbsp)
80 grams butter (⅓ cup)
3 eggs
1 cup sugar
1 tbsp vanilla
4 cups milk
7 small bananas
Tea biscuits (enough for layering)

  1. Prepare the Roux

    Melt 80 grams of butter in a pot over medium heat. Add 80 grams of flour and whisk until smooth and lightly golden.
  2. Add the Milk

    Slowly pour in 4 cups of milk, whisking continuously to prevent lumps. Cook until the mixture starts to thicken a little.
  3. Whisk in the Eggs

    Whisk 3 eggs, 1 cup sugar, and 1 tbsp vanilla in a separate bowl. Then, quickly add it to the pot with the milk and roux, stirring constantly. Cook on low heat until the pudding thickens to a lush creamy consistency.
  4. Start Layering

    Layer tea biscuits, followed by sliced bananas, and then a layer of pudding in a serving dish or rectangular Pyrex. Repeat the process until all ingredients are finished, ensuring the top layer is pudding.
  5. Garnish with Shredded Coconuts
