  • Ingredients of Beef-Topped Artichokes

Beef-Stuffed Artichokes

2 frozen artichoke bottom bags
3 carrots, cut into circles
4 potatoes, cut into slices
1 onion
2 garlic cloves
300 grams of ground beef
1 tbsp salt
1 tsp paprika
½ tsp black pepper
¼ tsp cinnamon powder

Sauce

3 large lemons, juiced
2 garlic cloves
¼ cup water
Salt and black pepper to taste
  • Method & Directions of Beef-Topped Artichokes

  1. Boil Artichokes and Carrots

    Bring 1 liter of water to a boil (or more if needed), then add the frozen artichoke bottoms and carrots. Boil the vegetables for 15 minutes, then drain and set them aside.
  2. Deep Fry the Potatoes

    Peel and slice your potatoes, then deep fry them in oil until golden brown. Take them out and set it on a paper towel.
  3. Lightly Fry the Boil Veggies

    In another pot, scoop 1 medium ladle of the frying oil and toss the boiled carrots for 7 minutes until they turn a nice golden color. Repeat the same process with the artichokes, then set both aside.
  4. Cook the Beef

    In the same pot, add garlic and onions, cooking until translucent. Then, add the beef and cook until browned. Once cooked, season with salt, paprika, black pepper, and cinnamon.
  5. Make the Sauce

    Mix the juice of 3 lemons with 2 crushed garlic cloves, water, salt, and pepper. Set it aside.
  6. Assemble

    Bring your dish together in a pot or baking dish, starting with the fried potatoes, artichoke bottoms, and carrots arranged around them. Stuff the artichoke bottoms with the spiced beef, then drizzle a generous amount of the sauce inside the artichokes and over the remaining veggies. Let simmer on low heat for 10 to 15 minutes and enjoy with a side of white steamed rice.
