  • Ingredients of Mexican Rice

    • 30 Minutes

Spice Mix

2 tbsp paprika
1 tbsp garlic powder
1 tbsp onion powder
1 tsp chili powder
1 tsp cumin
1 tsp ground coriander
½ tsp oregano
Chicken Marinade
500 grams chicken
3 tbsp yogurt
2 tbsp white vinegar
1 tbsp olive oil
1 tsp salt
½ tsp pepper

Rice

2 cups basmati rice
2 cups hot water
1 large onion
1 tbsp tomato paste
1 green bell pepper
1 red bell pepper
1 can corn, washed & strained
1 can red beans, washed & strained
Salt to taste

Sauce

1 cup cooking cream
3 tbsp yogurt
¼ cup siracha sauce
¼ soy sauce
  • Method & Directions of Mexican Rice

    • 20 Minutes
  1. Make the Spice Mix

    In a bowl, mix the paprika, garlic powder, onion powder, chili powder, cumin, coriander, and oregano. You will use this mix in 4 batches.
  2. Soak the Rice

    Wash the rice thoroughly then soak it for at least 10 minutes.
  3. Marinate the Chicken

    Cube your boneless and skinless chicken breasts and marinate for 10 minutes in 1 tablespoon of the spice mix along with the yogurt, white vinegar, olive oil, salt, and pepper. Cook the marinated chicken cubes in a hot oiled non-stick pan until golden brown. Take out and set aside.
  4. Sauté the Vegetables

    In the same pan, add more oil and cook the onions with tomato paste until translucent. Then, add the green pepper, red pepper, corn, and red beans - sauté together with 1 tablespoon of the spice mix.
  5. Cook the Rice

    Drain the rice and add it to the pan, stirring well to combine with the vegetables, transfer the chicken along with another 1 tablespoon of the spice mix. Pour in water and bring to a boil until it just covers the rice. Reduce the heat, cover the pan, and let it cook for 10 minutes.
  6. Prepare the Sauce

    In a pan, mix the cooking cream, yogurt, siracha sauce, soy sauce, and the last tablespoon of the spice mix. Transfer it to medium heat and bring to a boil until it thickens.
  7. Serve

    Enjoy your Mexican rice topped with its special sauce and a side of guacamole or salsa.
