Turnips

1 kilo small turnips
Cooking oil for shallow frying

Stuffing

1 cup short-grain rice
1 tbsp ghee
2 tbsp vegetable oil
250 grams of minced beef
½ tsp black pepper
1 tsp salt
1 tsp allspice

Sauce

1 onion, finely chopped
Salt to taste
2 garlic cloves, minced
1 cup water
1 tbsp chicken broth powder

Tahni Sauce

1 cup tahini
2 garlic cloves, minced
Salt to taste
1 cup plain yogurt
¼ cup lemon juice

  1. Preparing the Turnips

    Begin by coring and peeling the turnips, saving the pulp for later use. Heat some oil in a pan and shallow fry the turnips until they turn lightly golden.
  2. Cooking the Minced Beef

    In a separate pan, heat oil and add the minced beef. Cook thoroughly, season with salt and pepper to taste, then set aside to cool before mixing with the stuffing ingredients.
  3. Making the Stuffing

    In a bowl, mix together rice, ghee, cooking oil, cooked beef, salt, pepper, and allspice. Stir well until all ingredients are evenly combined.
  4. Stuffing the Turnips

    Carefully fill each turnip with the rice and beef mixture, leaving about ¼ of the space unfilled to allow the rice to expand as it cooks. Make sure the stuffing is evenly distributed for the best results.

    In a pot, heat 3 tablespoons of the vegetable oil used to fry the turnips. Add chopped onions and sauté until translucent. Then, stir in salt, minced garlic, and the reserved turnip pulp, allowing the flavors to blend together.
  6. Cooking the Stuffed Turnips

    Arrange the stuffed turnips in the pot with the open side facing up. Dissolve chicken broth powder in water and pour it over the stuffed turnips, ensuring they are partially submerged for even cooking. Cover and let them simmer until the rice is tender.
  7. Making the Tahini Sauce

    In a saucepan, combine tahini, garlic, salt, lemon juice, yogurt, and water. Place over medium heat, stirring continuously until the mixture starts to bubble. Pour the hot sauce over the stuffed turnips immediately for a rich, creamy finish.
