This Simple Nigerian one-pot chicken stew is thick and flavourful. It is made with tomatoes, peppers, fried/grilled chicken, and spices. This delicious dish is usually served with white rice or spaghetti.

- 1kg chicken drumsticks
- 1 medium-sized onion
- 1 tablespoon garlic powder
- 1 tablespoon ginger powder
- 1 tablespoon thyme
- 1 tablespoon curry
- 1 teaspoon rosemary
- 1 teaspoon black pepper
- 1 teaspoon bouillon powder (or 1 seasoning cube)
- salt to taste
- 6 tomatoes
- 3 red bell pepper
- 2 habanero pepper
- 1/2 cup olive oil
- 2 garlic cloves
- 1 cup chicken stock

- Brown the chicken
تم نسخ الرابطWash and pat dry the chicken, rub it with salt and black pepper. Cut the onion into two and chop it into small pieces. Heat olive oil in a pot, add the chopped onion pieces, then brown the chicken for about 10 minutes on each side. Take it out and set it aside.
- Blend the vegetables
تم نسخ الرابطBlend the tomatoes, red bell pepper, habanero pepper, garlic cloves, and the other half of the onion. Pour the blended tomato and pepper mix over heated olive oil and boil for 5-10 minutes to reduce excess water.
- Season the stew

- Add the chicken
