Ramadan Recipes: Soto Ayam

Soto Ayam is an Indonesian chicken soup with lots of flavors from aromatic ingredients like ginger, garlic, shallots, and turmeric. Between the delicious broth and the chicken and veggies, this will fill you up for the whole day.

Blend of spices

3 cloves garlic
2 medium shallots - quartered
2 red hot chili peppers
1½ tbsp fresh ginger
1 tbsp vegetable oil
1½ tsp fresh turmeric
1½ tsp ground coriander
salt to taste

Soup base

1 tbsp vegetable oil
2 medium potatoes - cut into ½cm slices
4 cups water
1 vegetable bouillon cube
150g dry ramen noodles

Chicken

1 tbsp vegetable oil
1free-range chicken - quartered
3 cloves garlic - thinly sliced
2 medium shallots - minced
2 tsp chicken spice mix

  1. Blend the spices

    Add all of the spices to a small food processor, and blend until smooth.
  2. Make the soup base

    In a large pot, add the oil on medium-high, add the spices mixture, and stir for 3 minutes. Add the potatoes, water, and bouillon. Cook until the potatoes are cooked through.
  3. Cook the chicken

    Add the oil to another large pan on medium-high heat. Add the chicken and let it cook until it is tender (about 40 minutes), then add the garlic, shallot, and chicken spice mix, and cook for another 3 minutes. Remove chicken pieces from the broth and set aside. When the chicken is cool, discard skin and bones and shred the meat into bite-size pieces.
  4. Compile Soto Ayam

    When the potatoes are cooked, add the chicken and the noodles to the pot. Cook until the chicken is heated through and the noodles are cooked (about 4-5 minutes).
  5. Serve

    Eat from a soup bowl, or serve a scoop of rice on a side plate, sprinkled with more shallots, and put a mouthful of noodles and chicken on the rice. Enjoy!
