Ramadan Recipes: Chicken Karahi

Chicken karahi is an ideal dish for iftar because it is a savoury curry, which makes a fulfilling meal once served with naan bread or rice. The karahi has a distinct tangy taste because of its tomato base mixed with flavourful spices and aromatic ginger.

Chicken Karahi Ingredients

2 tbsp ghee
2-3 tbsp oil
2 onions, finely chopped
8 garlic cloves, grated
3/4 ginger, grated
1-2 green chillis
1 whole chicken, skinless, cut into medium pieces
4 tomatoes, diced
1 tbsp coriander powder
1 tsp cumin powder
1 tbsp red chilli powder
1 1/2 cups plain yoghurt, whipped
1 tsp garam masala
1 tbsp, fresh coriander leaves, finely chopped
2-3 tsp salt

  1. Saute Onions

    Add ghee and oil to a large pot and heat till the oil sizzles. Add onions and salt, then saute them until golden. Add garlic, ginger, and green chillis and saute for a minute.
  2. Cook Chicken

    Add chicken pieces to the pot and fry until the chicken's colour changes and it stops releasing water. Add tomatoes, cumin powder, coriander powder, and red chilli powder, then saute for another minute. Lower the heat and cook the chicken for 20 minutes, stirring the curry once in between. Increase the heat and saute for another 10 minutes until the curry takes on a glossy appearance as the oil appears on its surface.
  3. Add the Rest of the Ingredients

    Lower the heat and add yoghurt and garam masala. Stir properly till the yoghurt has properly blended with the curry and the curry has boiled for a few minutes.
  4. Serve

    Top the curry with the coriander leaves and serve with naan bread or rice.
