Creamy Courgette Lasagne

9 dried lasagne sheets
1 tbsp sunflower oil
1 onion, finely chopped
700g courgette (about 6), coarsely grated
2 garlic cloves, crushed
250g tub ricotta
50g cheddar
350g jar tomato sauce for pasta

    Preheat the oven to 220C/fan 200C/gas 7. Bring a pan of water to a boil and cook the lasagne sheets for approximately 5 minutes until they're softened but not fully cooked. Rinse them in cold water and lightly drizzle with oil to prevent sticking.
  2. Preparing the Courgette Mixture and Assembling the Lasagne

    Heat oil in a large frying pan. Sauté the onion until translucent, then add the courgettes and garlic. Cook until the courgettes soften and turn vibrant green. Incorporate 2/3 of the ricotta and cheddar, seasoning to taste. Warm the tomato sauce in the microwave for 2 minutes on High.
  3. Assembling and Baking the Lasagne

    Layer the lasagne in a large baking dish, starting with half of the courgette mixture, followed by pasta sheets and tomato sauce. Repeat the layering, ending with blobs of remaining ricotta and sprinkling the rest of the cheddar on top. Bake on the top oven shelf for about 10 minutes until the pasta is tender, and the cheese achieves a golden hue.
