Ramadan Recipes: Himbasha

Himbasha is an Ethiopian flatbread that is mildly sweet and flavored with cardamom, raisin, and black sesame seeds. It is often made as a celebratory bread.

Himbasha can be made for breakfast or afternoon tea. It goes perfectly well with a cup of tea.

Himbasha

2 cups all-purpose flour
3 tbsp sugar
1 tsp instant yeast
½ tsp salt
Olive oil (2 tbsp plus 2 tsp to grease)
½ cup to ¾ cup warm water
¼ cup raisin
1 tsp black sesame seeds
½ tsp cardamom powder
3 tbsp milk (for brushing on top)

  1. Mix the dry ingredients

    In a large bowl, add the flour, instant yeast, sugar, salt, cardamom powder, black sesame seeds, and the raisins. Mix well to combine.
  2. Add the liquid ingredients

    Add the oil to the mix, and slowly add warm water to make a soft dough. Cover the dough and let it rest until doubled in volume.
  3. Knead the dough

    Knead for about 7 to 10 minutes to get a soft and non-sticky dough.
  4. Place the dough in a pan

    Once the dough has risen, grease a 9-inch cake pan. Place the dough and spread it evenly. Cover the pan and let it rest for about 30 to 45 minutes.
  5. Bake the Himbasha

    Preheat the oven to 350 F. Make patterns on the dough using a blunt knife. Brush the top with milk and bake for 25 to 35 minutes or until the Himbasha is golden brown on top.
