Ma'amoul

2 cups of fine semolina
1 cup of all-purpose flour
1 cup of unsalted butter, softened
¼ cup of granulated sugar
½ teaspoon of instant yeast
2 tablespoons of rosewater or orange blossom water
1 tablespoon of milk
1 cup of pitted dates, chopped
1 cup of nuts (such as walnuts, almonds, or pistachios), finely chopped
Powdered sugar, for dusting (optional)

    In a large mixing bowl, combine the semolina, flour, sugar, and instant yeast. Add the softened butter and rosewater (or orange blossom water). Mix the ingredients until you have a smooth dough-like consistency.

    Cover the dough with plastic wrap and let it rest at room temperature for about 30 minutes. This allows the semolina to absorb the moisture and gives the dough a smoother texture.
