Sholeh Zard

1 cup Basmati rice
2 cups sugar
4 cups water
1/2 teaspoon ground saffron threads (soaked in 2 tablespoons hot water)
1/4 cup rosewater
1/4 cup unsalted butter
Ground cinnamon and slivered almonds for garnish (optional)

  1. Wash and Soak Rice

    Wash the Basmati rice thoroughly and soak it in water for at least 2 hours.
  2. Cook the Rice

    In a large pot, bring 4 cups of water to a boil. Drain the soaked rice and add it to the boiling water. Cook the rice on medium heat until it's soft and slightly mushy.
  3. Prepare the Saffron Mixture

    While the rice is cooking, soak the saffron threads in 2 tablespoons of hot water. Let it steep, releasing its vibrant color.
  4. Add Sugar and Flavorings

    Once the rice is cooked, add sugar, rosewater, and the saffron mixture to the pot. Stir well until the sugar is completely dissolved. Allow it to simmer for about 20-30 minutes until the pudding thickens.
  5. Infuse the Butter

    In a small pan, melt the unsalted butter. Carefully add a ladle of the hot rice pudding to the melted butter and mix it well. Pour this butter mixture back into the rice pudding, stirring continuously.
  6. Serve and Garnish

    Pour the Sholeh Zard into a serving dish or individual bowls. Allow it to cool to room temperature and then refrigerate until chilled. Garnish with ground cinnamon and slivered almonds before serving (optional).
